Transforming Urban Food Value Systems

The way we produce, distribute, and consume food in cities is at a turning point.

REDESIGN is a Horizon Europe project committed to transforming urban food systems by bridging knowledge, innovation, and design. Our goal? To create just and resilient urban food communities that are sustainable, inclusive, and adaptable to future challenges.

Why REDESIGN?

Cities face major food-related challenges:

Food security and green justice

Our solution: ensuring fair access to healthy food.

Climate change

Our solution: making food systems more resilient to environmental shifts.

Innovation gaps

Our solution: creating new learning opportunities and frameworks.

Value chain transformation

Our solution: addressing inefficiencies from production to consumption.

Our Approach

Urban food systems are complex, interconnected, and deeply embedded in local economies, policies, and cultural identities. At REDESIGN, we understand that transforming these systems requires a holistic, collaborative, and design-driven approach.

We work at the intersection of policy, innovation, and community engagement, creating knowledge-sharing platforms and co-creative environments where diverse stakeholders can experiment, learn, and implement sustainable solutions.

Our aim is to build resilient, fair, and efficient food value chains that benefit both people and the planet.

REDESIGN connects:

Urban food production and distribution with the built environment, local needs, and city planning policies.

Scientific knowledge and real-world practice, ensuring that innovation leads to practical, scalable solutions.

Design principles and aesthetics, in line with the New European Bauhaus (NEB) initiative, to make food systems not just functional but also beautiful and inspiring.

How we do it

Urban Food Policy Action Plans

We develop evidence-based, holistic policy frameworks that help cities rethink and restructure their food systems. These action plans guide decision-makers in creating sustainable urban food policies, improving supply chains, and addressing food insecurity.

Co-Created Living Labs (LLs)

We establish three Living Labs (LLs) (Salt, London, Dortmund) —experimental spaces where local communities, policymakers, artists, and businesses come together to test and implement new food system models. These labs foster hands-on learning, experimentation, and direct community participation to drive real impact.

The REDESIGN Network (RED-N)

A dynamic collaborative network that connects policymakers, researchers, and practitioners across Europe. The RED-N facilitates knowledge-sharing, provides tools for innovation, and strengthens partnerships to scale up successful urban food solutions.

The Learning Loop Methodology

A key pillar of our project, this methodology ensures that insights and best practices from the Living Labs and partner cities are continuously refined, shared, and adapted. Through iterative learning cycles, we help cities adopt flexible, evolving strategies to improve their food systems.

Expected Impact

500+

people engaged through Living Lab activities.

90

artists involved in co-creation and cultural events.

250

policy-makers participating in trainings, surveys, and the RED-N network.

30

new jobs created through knowledge sharing and innovation.
